This 3-day open enrollment course has been developed by the Food Safety Preventive Controls Alliance (FSPCA) incollaboration with the FDA. The Current Good Manufacturing Practice, Hazard Analysis, and Risk-basedPreventive Controls for Human Food regulation (referred to as the Preventive Controls for Human Food regulation)is intended to ensure safe manufacturing/processing, packing and holding of food products for human consumption inthe United States. The regulation requires that certain activities must be completed by a “preventive controlsqualified individual” (PCQI). This course is the “standardized curriculum” recognized by FDA. Successfullycompleting this course is one way to meet the requirements for a PCQI.

Marketing Local Meat: a hands-on intensive for meat producers
This full-day marketing workshop for local meat producers focuses on how to achieve profitable outcomes through targeted marketing strategies. This intensive will include tastings, recipe fundamentals, strategies to close a sale, and ways to target your ideal buyers so that you can sell more meat. Plus:
• Gain knowledge to determine market channels that meet your price point using a newly revised calculator tool developed by our partners at Cornell Cooperative Extension.
• Learn three easy ways to sell any cut on the animal by knowing where cuts are located and their corresponding cooking techniques for beef, pork, and lamb.
• Engage and respond to customer requests for cooking tips and help move those hard-to-sell cuts.
• Hear from NC farmers who are finding ways to target their niche market.

Workshops will be the first Thursdays of the month from September through December from 9 a.m. until 12 p.m. Space is limited. You must pre-register for this workshop online or call Sara Drake at 336-242-2082. You can register for one or all the sessions. The cost is $20 per session or $60 for all four sessions. Registration is not complete until payment is received. Registration and payment must be completed one week prior to each workshop.
The first workshop of the series will be held September 6 and will focus on chicken. During the workshop, you will learn how not only to cut up a whole chicken, but also how to debone a chicken. Our second workshop will cover pork and will be held on October 4. The November 1 workshop will focus on other poultry and will include turkey, duck, and Cornish hens. The final workshop will be December 6 and the topic will be beef. At each workshop, the local farms will join us when they can, so you are able to meet your farmer.
All workshops will be held at the Extension Office, 301 E. Center Street, Lexington, NC.
